When Keith Kopka, head chef at The Members’ Club at St. James Plantation in Southport, NC, was diagnosed with ALS, his friends, family and regular diners rallied to raise money to help his family. A charity golf tournament, silent auction and dinner brought in more than double the expected donations and now Chef Kopka and his family have a comfortable reserve for the future.

He’s a retired professional wrestler and now manufactures most of the rings, ropes, ring skirts, wrestling costumes, masks and knee and elbow pads you’ll see on TV. All from a modest home in southeastern North Carolina.

When you get to write about someone who appreciates life, it makes a difference. Leland, North Carolina, dentist Chad Biggerstaff is one of those people. After a horrible bicycle accident nearly killed him, he went on through therapy and rehab to complete dental school at UNC Chapel Hill, and then on to become partners with John Sweeney at Blue Wave Dentistry. Chad’s strength, faith and love of family and friends was inspiring.
